Breakfast balls….

A delicious summery breakfast treat made from sprouted buckwheat (which is not actually wheat, it is gluten free), desiccated coconut and a little coconut milk to hold it together (sure it would also work with a little water or home-made nut milk…). Simply blend the ingredients adding enough liquid to make the mixture hold together when you form it in to balls, and taa-daa, breakfast time! Seems like too much of a treat to be a healthy start to the day, but full of protein and good fats to kick start you and keep you going! I love breakfasts like this one…

Sprouted chick pea curry….

It’s harder for the body to process several different types of protein at once, so instead of having sprouted rice with my chickpeas, I mashed up some cauliflower to make vegetable ‘rice’ instead. It helped me get more vegetables in to my meal, and also helped to cool down the spiceyness of the curry too - plus we had loads of cauliflower to use up! Win win for everyone!

The curry also has spring onion, kohl rabi, fresh chilies, ginger and garlic, all blended with coconut milk and hot curry powder.

I then made porridge with the trust Kara coconut milk - it was a little chewy using whole groats, but nice to have the taste of porridge again :)

A lot of the time, the best thing to do is just to keep things simple…
Really focus on and appreciate the natural taste of foods, just on their own as nature intended them. The body digests things easier if it has less variety to digest at once, so concentrating on just a couple of flavours at a time can really help for some meals.

I thought about the flavour and texture of each one as I ate it and thought about the variety of fruit that is out there, all with so much more depth than something sugar ladened. We are so lucky to have so much choice, even just eating one type of fruit for breakfast we could have a completely different breakfast day after day! Get tasting the fruits of nature everyone!

Finally feeling a little more inspired… Here I blended soaked cashew nuts with a little water and cocoa powder and created ‘chocolate mousse’, it came out with an amazing texture, I was really pleased. And such simple ingredients - gluten free, sugar free and vegan. And high in protein so you don’t need to eat much and it keeps you full! What more could you ask from a dessert?? Delicious with a little peppermint extract! 

A little lack of inspiration

I must confess that I’ve been struggling with my food the last few weeks. Life keeps getting in the way and saping my energy and stopping me from experimenting and keeping inspired. I wasn’t going to share this, but then I thought I want to share what it’s really like trying to keep on a diet like this, the bad points as well as the good.

One problem that I’ve been having is that when I have low energy I just want to eat dried fruit, which might sound healthy, but the sugar levels are too high and have a detrimental effect on my energy levels, especially with me having Chronic Fatigue Syndrome. Dried fruit should only be eaten as an occassional treat.

I also thought it was a good idea to try and eat sprouted wheat bread again as we had quite a few loaves left in the cupboard… The fact that the wheat is sprouted makes it easier to digest, so my tummy stayed happy, but my mood did not!! I had been eating a couple of slices of bread every day and was getting moodier and moodier, and it took me a few days to finally figure out it could be the bread causing it! It’s left me feeling very tired, and still a bit up and down on the moods, but I’m finally starting to feel a bit more like myself again.

These couple of weeks have made me realise that I could really do with writing down all my recipes and coming up with food plans. I love experimenting at the time and seeing what meals and snacks I can invent, but when life gets hectic it would be amazing to have a plan set in place so there’s something to tell me exactly what to do and when, so I can stick to the diet that makes me feel good and not have to think about it. That’s my aim - to produce a plan that everyone can follow. Make life as easy and as healthy as possible.

The accidental discoveries are always the best…

I was experimenting by making truffles with soaked dried figs the other day, and had some left over blended figs. I thought I’d stick it in the freezer just to see what happened… Turns out it makes a lovely frozen treat, nice texture and very tasty. I did it on purpose… honest!

Also freezing chunks of banana and then blending just before serving makes another great alternative to ice cream, especially when sprinkles with cocoa nibs for a little bitter chocolatey-ness!

Less eating… more posting.. Or I must learn to multitask!

It does take me a long time to get in to new habits, and one such habit is blogging about what I eat! It has been far too long since my last blog, but luckily I have been discovering new favourite foods, which I will be cooking again soon and can go on to share…

Yesterday I attempted using sprouted buckwheat for the first time to make biscuits….

The texture worked really well mixed with cacoa nibs, but with no added sugar or sweetness, it was very bitter on its own. I added ‘tofu coconut’ cream to the middle to make a satisfying afternoon tea snack.
